Roast Beef in Madeira Sauce "Double"

Thin cuts of lean beef, roasted in the oven combined with a black pepper crust and drizzled with Madeira sauce with mushrooms. For contrast, it is served with a creamy yam mousseline.

Ingredients: rump steak, yam, mushrooms, onion, wine, butter, cornstarch, sea salt, extra virgin olive oil, garlic, black pepper.
